A favorite trick that I learned in culinary school was the pickling of sliced red onions in an acidic liquid. Not only will it transform them into a bright hot pink color, but they will actually taste crisp and refreshing without the harsh bite that raw onions are known for.

They say that you are what you eat, so if you know someone who is bright, vibrant and colorful, then this food gift is for them. Sprinkled on top of everything from salads to Mexican foods (like tacos), it’s a gorgeous food gift that will make any dish stand out.

Pickled Red Onions

Yield: 1 cup

Active Time: 5 minutes
Total Time: 3 hours

1/2 cup fresh lime juice (approximately 4 limes)
1 large red onion, thinly sliced

1) Combine onions with lime juice and allow to soak for 3 hours at room temperature, stirring occasionally to ensure lime juice fully coats the onion slices.
2) Transfer to the refrigerator, or immediately can it via the hot packing canning method.

Gifting Idea:

This food gift is best placed in a glass jar adorned with a bright colored gift tag to play up the vibrant colors of the onions. When ready to enjoy, sprinkle on top of salads or Mexican dishes for a crisp, juicy pop of tangy flavor.
